Recipes to Die For

 It’s that time of year again–Halloween, the beginning of the holiday season.  Somehow that feels like a trick, but even before the day of ghosties and ghoolies you’ll find Christmas trees and even New Years decorations in the stores.  (I’ve already checked them out.)

 But the thing about holidays that I love best is the food.  You have to admit that once the wrappings are off the gifts it’s time to look forward to holiday fare.  But before we leap into that holiday, let’s think about the two we’re facing.  And what could be linked to both Halloween and Thanksgiving?  Why the plump and ever-pleasing pumpkin.

 It just so happens I included a pumpkin recipe in my latest release, RECIPES TO DIE FOR, A Victoria Square Cookbook.  (I write the Victoria Square Mysteries, and this is a companion piece for the series.)  In it, Katie Bonner, the owner and manager of Artisans Alley on the quaint Victoria Square shopping district, has collected the recipes of her friends, her artisan vendors, and the merchants on Victoria Square and put it together in book form.

 Here’s her recipe for pumpkin chiffon pie.  Not only is it a great Halloween treat, but let’s face it, by the time you’ve made it through the appetizers, the turkey, stuffing, mashed potatoes and gravy, who has room for Thanksgiving dessert?  With this light and creamy pumpkin pie, you will.

 

Pumpkin Chiffon Pie

 2 ¾ cups cold milk

2 packages (1.5 ounces each) instant vanilla pudding

1 can (15 ounces) pumpkin

1 teaspoon ground cinnamon

½ teaspoon ground ginger

¼ teaspoon ground cloves

1 prepared graham cracker crust (9 inches)

frozen whipped topping (thawed) optional

additional cinnamon for dusting (optional)

In a large mixing bowl, combine the milk and pudding mixes.  Beat for 1 minute (the mixture will thicken).  Add the pumpkin and spices; beat 1 minute longer.  Pour into the piecrust.  Cover and refrigerate for 2 hours or until firm.  If desired, garnish with whipped topping and sprinkle with cinnamon.

Yield:  6-8 servings.
